Maximising Food Safety

It is important for food processing facilities to manage hygiene to meet ever increasing food safety standards.

The bacterium Listeria monocytogenes can persist longer under adverse environmental conditions than many other bacteria that present a food safety concern. In addition, it is capable of surviving refrigeration as well as growing at low temperatures. It is commonly found in ready-to-eat items, meat, poultry, dairy products and seafood. This pathogen is widely present in soil, plant and water surfaces. It causes less than one percent of foodborne diseases but it is responsible for causing listeriosis in humans which commonly results in symptoms requiring hospitalisation. For healthy individuals, the main symptoms are fever and diarrhoea, whereas for pregnant women, it may cause septicaemia, meningitis, death of the unborn child or stillbirth.

Listeria outbreaks are often associated with a processing failure and can result in factory/company investigations, affect brand reputation, cause product recalls and/or company shutdowns. Therefore, preventative steps can be taken to avoid outbreaks to assure consumer safety while protecting revenues.

The safety of food is considered a high priority from an international perspective by the World Health Organisation (WHO). To reduce contamination, the products are often treated with various chemical compounds including ethanol, chlorine, sodium hypochlorite and/or organic acids. However, high dosage and repeated usage of these compounds potentially results in tainting of the produce and results in residues of concern on the surface of the treated products and equipment.

It is no secret that the industry is under enormous pressure to deliver products that are fresher in taste and appearance, more conveniently produced and packaged to prepare and eat, with less preservatives. They also need to travel further, last longer and remain safe at the same time.

In independent testing with Campden BRI (the leading independent UK food research institute), Ozo has demonstrated that its EW solutions:

  •  Are effective against Listeria monocytogenes in both clean and dirty conditions (EN1276)
  • Can be applied across the food production and transport processes
  • Have been shown to kill an additional 2.5-3.5 log (99.99%) over chilled water/chlorine dioxide treatments with no taint or problematic residue levels, significantly higher than the commonly used chlorine treatments that achieve just 0.5 – 1.5 log order reduction on most produce types

EW also passed all of the main EU food disinfectant standards including EN1650 (fungicide/ yeasticide), EN1276 (bactericide) and EN13697 (surface bactericide/fungicide/ yeasticide) in clean and dirty conditions, and at room and lower temperatures, a unique combination for food safe disinfectants.
